3x 400g tins of San Marzano (whole) peeled tomatoes
2x Red Onion, medium size, sliced thinly into rounds
2x Garlic cloves, minced
50ml Olive oil
Step 1: Heat olive oil over a low heat, add onions, cook very gently for 45 minutes stirring regularly until they are soft and caramelised.
Step 2: Add garlic, cook for 1 minute before adding tomatoes. Cook slowly for 1.5 hours, stirring occasionally. The tomatoes will reduce down to a beautiful vibrant deep red coloured, rich, jammy flavour packed sauce. Season with a little salt to taste if required.
