
Asparagus Recipe

8-10 Asparagus Spears

Extra Virgin Olive Oil

Superstraccia

Balsamic vinegar
-
Lemon zest from 1 lemon

2 teaspoons fresh garlic
-
1-2 tablespoons of fresh mint

Sea salt & pepper
Method
- Add finely chopped mint, lemon zest and grated garlic into a bowl to make your gremolata. .
- Slice off the rough ends of the asparagus and place the spears onto a tray.
- Drizzle with olive oil and balsamic.
- Gently roll the asparagus until coated, season with salt & pepper.
- Grill for a quick 2-4 minutes, turning half way through.
- Create a bed of Superstraccia, then plate the asparagus, on top and spoon over the gremolata mix.
- Drizzle more extra virgin olive oil and serve immediately .
- Ideal with a glass of cold white wine
