GRILLED ASPARAGUS W. SUPERSTRACCIA

Ingredients

  • 8-10 Asparagus Spears 8-10 Asparagus Spears
  •  Extra Virgin Olive Oil Extra Virgin Olive Oil
  • Superstraccia Superstraccia
  • Balsamic vinegar Balsamic vinegar
  • Lemon zest from 1 lemon Lemon zest from 1 lemon
  • 2 teaspoons fresh garlic 2 teaspoons fresh garlic
  • 1-2 tablespoons of fresh mint 1-2 tablespoons of fresh mint
  •  Sea salt & pepper Sea salt & pepper

Method

  1. Add finely chopped mint, lemon zest and grated garlic into a bowl to make your gremolata. .
  2. Slice off the rough ends of the asparagus and place the spears onto a tray.
  3. Drizzle with olive oil and balsamic.
  4. Gently roll the asparagus until coated, season with salt & pepper.
  5. Grill for a quick 2-4 minutes, turning half way through.
  6. Create a bed of Superstraccia, then plate the asparagus, on top and spoon over the gremolata mix.
  7. Drizzle more extra virgin olive oil and serve immediately .
  8. Ideal with a glass of cold white wine
